I never found anyone in Germany making bread pudding, maybe the recipe is more common in English speaking countries and it is often served for breakfast or as dessert. When I still lived low carb, I would use a bread that is low in carbs, now I don’t mind about that any longer.
This recipe serves probably 2-3 people and is very easy to follow.
1 loaf of bread such as toast or the typical white bread available in the UK
200ml plant based heavy cream
3 tablespoons plant based butter
Sugar or Erythritol or sweetener you desire
First cut the bread into bite sized cubes and put them into a baking dish. Stir together the heavy cream, warm up the butter and gradually whisk together with added cinnamon, pour over the bread. Let the bread soak up the liquid for an hour and then bake in the oven at 200°C for about 40 minutes. If you sprinkle some brown sugar on top before baking, it will make a nice crust.
