I have looked into various different recipes on the Internet for this recipe and used roughly the same measures.
The structure of the cheese turned out as firm as usual cowmilk Mozarella and at the same time you can pull it apart, too. A big factor here is the psyllium husk powder, which I have at home anyway.
Ingredients and preparation:
3-4 El psyllium husks
Juice of a lemon
200ml of water
I covered the cashews with water and let them soak overnight in my blender. I also poured water over the psyllium husks and let stand for about 2-3 hours . Mix psyllium husk together with the the cashews and the water soaked in. Add lemon juice, garlic (amount of desire and vampire supply in your region) in a bowl and mix everything right.I seasoned with salt, pepper and nutmeg. Chop your spring onions and add with a bit of olive oil.
Pour mixture into a container and spread evenly with a spatula, cover it and put it in the fridge to get firm.
The cheese was easy to remove with a knife and easy to cut.
I used too much garlic though and I felt like I could defend myself on a cemetery around vampires in their graves. Not so suitable for lunch at work unless you want to stay away from your colleages.
