I did not cook this recipe for a certain number of people, but just started that anyway some day because it was a dull and rainy day and stews are always nice and warming and filling.
I had my friend, also a Vegan, at my home that day and she confirmed that this Fricasesee is really tasty and almost similar to a chicken fricassee. I think the taste is mostly due to the broth (here of course with vegetable broth) and the peas, not so much to the carcass of a poor soul.
For a big pot full of fricassee I used the following ingredients:}
1 can jackfruit in water (drained weight is about 330g)
1 cup sweet corn
1 cup of peas
10 stems of white asparagus (never found them fresh here in the UK)
1 Onion (I used the white part of leftover spring onions)
3 cloves of garlic
1 liter vegetable broth
Rosemary, black sesame seeds, xanthan
Step one was to drain the jackfruit in a colander and then pull the flesh apart.
I steamed the jackfruit with finely chopped onion and garlic in olive oil in a large pot. Fill up with liter vegetable broth and let simmer for some minutes. Add peas, corn, fresh rosemary and asparagus, continue to simmer. I carefully thickened the fricassee with xanthan gum. You have to be careful by doing that to not make up lumps and to not make it too slimy, which happens quite with xanthan if you used too much powder. Serve with brown rice or bread and enjoy.
